Heura revolutionizes plant-based food manufacturing with Good Rebel Tech

The plant-based food manufacturing is going to be completely redefined thanks to Heura’s latest product. The plant-based organization has just introduced Good Rebel Tech (GRT)a new approach to food technology that will produce macro- and micronutrient dense foods in a more sustainable way than has been technologically possible to date.

While the food industry currently generates 1.3 billion tons of waste a year worldwide, Heura’s Good Rebel Tech is leading a new, more sustainable food frontier, using plant sources not used in their natural structures.

By discovering new fractions of plants and elucidating their structures at different scales, Heura’s R&D team, the TechRebels, have developed a new technology platform that exploits the intrinsic properties of plants to unlock healthier food options through simple processes and low energy consumption.

Whole plant functionality

“Instead of focusing on extracting and isolating the proteins from the seeds of legumes, we are investigating ways to harness the functionality of whole plants in their natural structures,” says Isabel Fernández, director of Science and Technology at Heura.

This unique approach allows the team valorize naturally present micronutrients in the starting materials, and simply improve their bioavailability when necessary, rather than including them as additive ingredients. In this way, during the manufacture of the product, minimal and only physical processes are required, and any type of chemical processing is avoided.

“Leveraging discoveries in plant cell physiology, colloids, and biopolymer science, combined with computational fluid dynamics and engineering techniques, we have been able to create a technology platform that rewrites the current rules of protein processing. plant-based foods, and leads to a new ecosystem of sustainable manufacturing,” Isabel Fernandez continued. “We are immersed in cutting-edge research in collaboration with top-level scientific experts to address the biggest technological challenges facing the plant-based industry today.”

Good Rebel Tech will file its first patents in 2022, covering the production of nutritionally superior plant-based products. In the past year, Heura has quadrupled the size of its R&D team, and will launch up to 10 new products in 2022.
