Väcka creates the first vegetable cheese with olive oil and melon seeds

Väcka continues to innovate in food. The foodtech specialized in the production of vegetable cheeseshas recently launched the only two products made from olive oil and fermented milk from melon seeds: Mözza and Pumpkin Chxddar.

This innovation, for which the firm applied for a patent at the end of last year and which progressively it will also apply to the Vrie and Filä varieties, It represents a disruptive innovation in the production of vegetable cheeses, improving the flavor and the sustainability of the production process.

Väcka opens the year with new versions of its Mözza and Pumpkin brands, in which has substituted fermented almond milk for melon seed milk, and coconut oil for extra virgin olive oil. These changes have led to an improvement in the flavor of the products and a production process that is more respectful of the environment, since 99.1% of water consumption is reduced, 98.7% of land use and 91, 8% of CO2 emissions, in addition to reducing 73.6% of saturated fats for the Mözza brand.

«We carried out a Life Cycle Analysis, where we investigated various seeds and the melon seeds stood out for their nutritional value and their properties in terms of aroma and flavor. In addition, to the new versions we have added ingredients of high nutritional value, such as oats and beans, and calcium supplements. The result is a product that, among other properties, guarantees a 3.3 increase in the melted area, giving it greater elasticity and versatility in the preparation of tasty dishes.”explains Ana Luz Sanz, co-founder and CEO of Väcka, created together with Maxime Boniface, CTO of the firm.

This innovation allows Väckalanza to market the Mozza in sliced ​​and grated format (formerly made only in large blocks) and the Pumpkin Chxddar (formerly a sauce or dip type) also sliced ​​and grated.

Melon seeds stand out for containing a high dose of linoleic acid, which significantly affects neuronal functioning, strengthening the immune system and reducing cholesterol, acting as a preventative of cardiovascular system conditions. In turn, the substitution of coconut oil for extra virgin olive oil allows the production of a product almost free of saturated fats, which distinguishes it and makes it fully competitive with products of animal origin. Väcka is the first plant-based foodtech to implement this innovation in its products.
